Ingredients:
1 pita bread round per pizza(recommend Toufayan brand in white, onion or wheat) naan can be a substitute
1 cup of hummus
2-3 tbsp of pizza sauce or marinara sauce
Diced veggies - onions, peppers, olives, spinach, zucchini, or your favorites
1 tbsp olive oil
1 cup of vegan mozzarella shreds
A handful of vegan feta cheese for crumbling on top (optional)
(This recipe can also be made without any cheese if desired.)
Instructions:
- Preheat the oven to 375 degrees F
- In a saucepan, heat olive oil over medium heat
- Add veggies and saute until tender-crisp (about 5 minutes) or skip the saute if preferred and stir unheated veggies together w/olive oil
- On a baking pan, place pita and cover in a layer of hummus
- Spread a thin layer of pizza sauce or marinara sauce
- Top with sauteed or non sauteed vegetables
- Sprinkle vegan cheese shreds over veggies and a handful of feta if desired
- Pop in oven for approx. 8-10 minutes..or until feta is slightly melted and edges of pita are browned
- Remove from oven and let sit for 1-2 minutes and enjoy!
